Peppers & Biscuits Oh My

As a new blogger bare with me as I am not a speaker or writer. I've been eating pretty clean in the sense that I rarely bought premade or prepackaged food. I'm aiming for not buying those items at all, but I believe that is unrealistic. As long as I can find low sugar with limited ingredients items at times that might have to be an option. Last night I made my husband & I stuffed peppers & jalapeno cheddar biscuits. I'll have the link below for the biscuits. My husband even liked them, however he's Mikie he eats everything just to finish the food & not waste it.

The peppers I made are from no specific recipe. I just mix whatever meat I want to use, sometimes I'll use mushrooms thinly sliced to add for additional meat. This time I used 1/2 ground turkey & 1/2 ground sausage with shredded carrots, onions, some spinach & a can of italian diced tomatoes. I didn't use eggs or any filler since I didn't care if they fell apart. I did however add some quinoa. It was pretty good but need to add more seasoning to the next batch. The picture is from before baking, forgot to take pictures of the after until we started eating them. Oops, I'll learn to remember that.

The ultra low carb cheesy jalapeno biscuits were pretty good. A bit more cakey like than I'd prefer & I didn't use as much of the called for jalapeno's. For me the heat was just perfect. I have decided next time I will try it with bean flour and see if it is less cakey like. Once again I forgot to take a pre bake picture. These were after they were done. People ask why I go out of the way to cook stuff like this myself when I can buy them & bake them with less work. But really isn't that the reason we are all sicker & have more pain than 50 years ago. Our foods have advanced so much that it has made it easier for the working people, but it has also made it worse for us. You know that saying, people didn't stop to ask if we should, just that we can. Make a double batch & freeze the reminder for later that way you are only having to make it once a month. Clean eating is healthy and will benefit you more than you know.
